The only way of disabling microcode update on windows is to apply windows-patches selectively (omitting the one with microcode update), or completely disabling windows update service.
But instead of that I'd recommend to download update directly from Intel, and to update your esxi-server manually. Sometimes it takes quite long time till new bios-version (with updated cpu-microcode) is released...
